CONFIDENCES

AOC Montagne Saint-Emilion

Micro cuvée prestige

TASTING

Complex and Structured

Of a deep, intense crimson red, this wine releases aromas of ripe black fruit from the very first taste. After swirling, the aromatic complexity reveals savoury notes of spice and vanilla.

On the mouth, this wine is round. Fruity aromatic complexity is combined with tertiary aromas from barrel ageing, expressing empyreumatic notes of caramel and roasting. The tannins are silky and smooth. The beautiful aromatic complexity gives way to a long, spicy finish, with a subtle taste of liquorice.

This wine can be enjoyed now, but aeration is recommended. The complex structure gives this wine the potential to be kept for several years, so it will be just as enjoyable to drink.

Note du dégustateur James Suckling

Tasting by Andreas Larsson - World's Best Sommelier 2007

VITICULTURE

85% Merlot and 15%  Cabernet Franc

For this blend, a meticulous plot selection is carried out to choose the best grapes.

The yield is reduced to 30 hectolitres per hectare and the grapes are harvested by hand to preserve their quality.

After harvesting, the grapes undergo two sortings: one on a vibrating table and the other using a densimetric bath.

VINIFICATION

100% integral vinification. A long maceration lasting for 3 to 5 weeks is followed by regular punching down of the cap. This technique gently extracts the aromas, colour and tannins from the grapes. Once alcoholic fermentation is complete, malolactic fermentation takes place in new French oak barrels.

AGEING

Aging lasts for 24 months in new French oak barrels. The tertiary aromas develop and evolve thanks to the barrel's natural micro-oxygenation process.
During a final tasting, we select the highest-quality barrels that will make up this unique and privileged cuvée.
