Our vintages
FERMENTATION
The grape wines are complete destemming. At the winery, we sort perfectly ripe berries and also eliminate plant waste. This sort system is possible thanks to the densimetric bath. There is a long time of maceration between five to six weeks with controlled temperature at 25°C. Malolactic fermentation in vats and then casking for a minimum aging of 12 months in barrels.
AGEING
We strive to preserve the natural aromas of the grapes. This is why the blend is made after 12 months' ageing, with one third of production in barrel and two thirds in vat.
All our barrels are made from French oak and a third of them are replaced each year.
